Cola-BBQ Baked Chicken

I found this recipe in the St. Jude Altar Society cook book, and we've had it in the regular rotation ever since.

(I give up... the image is not sideways on my computer, but when I upload it, blogger turns it sideways... how frustrating!)

Cola-Barbecue Baked Chicken
4 chicken breast halves (about 2 lbs)
2 T. all purpose flour
2 T. oil
1/2 c thinly sliced scallions
1 c ketchup
1 c cola soft drink
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp black pepper

Heat over to 375. Dust chicken lightly with flour, shaking off excess. Heal oil in skillet over high heat. Add chicken and brown about 3 minutes on each side. Place chicken, skin side up (we always use boneless skinless so this doesn't pertain), in shallow 2 quart baking dish (I just use a 9x13). Sprinkle with scallions. Mix remaining ingredients and spoon half over chicken. Bake 20 minutes. Pour remaining sauce over chicken and bake 15 minutes longer until chicken is tender and sauce is bubbling.

Served with long grain/wild rice and a steamed veggie.

update: just pulled THIS out of the oven for dessert :) YUM!

  2. I've made something similar to this using orange soda. Sounds weird, but was tastey! May have to find that recipe as well :)

  3. I just go with whatever soda we have in the house (I'll have to remember to try it with orange sometime)... It's very tasty with regular Coca-Cola (we never have that around), also just as good with Diet Dr. Pepper (James's life source, lol) Today it's made with Diet Dr. K (Dillons' knock-off Diet DP :) )
